Aloo-Beans Bhaja/Potato and Long Beans Sauté

Long gap and huh!!!
...watching me closely and reading my recipes…some known and some unknown friends…have also posted recipes like mine.

Not that it comes under plagiarism, but, every lady of her own kitchen has similar thoughts and very similar ways of cooking like someone else.

No gist of why I’ve been away for so long but cutting short would like to share something very simple like a sauté of these two simple vegetables.

This is for my sweet little friend who is new to cooking and asked for a simple side dish that goes well with bhat and dal.

Simple ingredients:

Potatoes: 2 medium sizes. Peeled and cut into tiny cubes

Long beans: One grip hold. Washed and cut into 1 inch length.

Oil: 1 ½  tbsp.

Haldi powder: ¼ tsp.

Red chilli powder: ¼ tsp.

Salt to taste

Cooking (will hardly take 8-10 minutes to finish it off)

Start:

Heat the kadhai and add the oil.

Wait for smoking point.

Next add the potato cubes and stir fry while reducing the heat.

A couple of minutes and soon add the haldi and red chilli powder and salt and stir fry for another couple of minutes.

Next add the beans and cover and cook for 3-4 minutes.

In between stir it now and then.

The beans will release some water which will help the two veggies to get cooked properly.

Once the potato is soft and the beans start losing its crunch, increase the heat and stir fry for a minute and then switch off the gas stove.

Serve hot with bhat and dal or with hot rotis or parathas.

I know my little friend will be delighted with this easy recipe which is so simple and at the same time tasty, healthy and of course a learners delight.
