Tiffin and snacks are
common in Indian homes. There are so many different types of tiffin, with every
region, giving its different taste and flavour. Be it anywhere in India,
Indians enjoy the tiffin.
Talking about
pancakes, memory is still fresh in my mind, the different types of Bangali
pancakes my mother used to make for us. Some were traditional and some her
innovations. How simple it may be, the taste was always so good. Miss that Ma.
The simple atta pancake, sweet pancakes, ahaaa!! We savoured those sweet ones,
and asked for a second helping.
Let me take you through today’s vegetable utthappam. Simple, easy and tasty.
Ingredients:
Dosa batter: Quantity
as per the number of them you want to make.
Vegetables: Capsicum,
carrot, onion, tomato, green chilly, all finely chopped.
Salt to taste
Cooking oil
Preparation:
Put in all the chopped
vegetables in the dosa mix.
Add water to make a
pouring consistency.
Add salt.
Mix well.
Cooking:
Heat a flat pan/tawa.
Pour oil enough so
that it spreads all over generously.
Take a ladleful of the
mix and spread it on the hot tawa. Pour little oil on the top. Reduce the flame
and cover the tawa and allow it to cook for few minutes.
Next flip the half
cooked utthappam and let the other side cook for some more time. Pour a little
oil along the side and raise the flame.
A healthy desi pancake
for breakfast or evening tiffin.
What more to want?
Little labour and taste bound food for the palate.
Try it at home. And
children who do not like vegetables and prefer chicken dishes only will also
relish it.
Make some home-made
tasty chutney to serve with it. The regular coconut chutney is the best.
Less time in the
kitchen, healthy and tasty food on the table.
