Mixed Vegetable Curry with Simple Spices/A Medley of Vegetables

 


Not that every day we like to eat spicy curries. Sometimes a simple dish, with little effort, can make all the difference.

Though this curry does not fall in the category of Shukto, yet it is a mix match of a variety of vegetables.

This can be served for lunch, along with the main dishes. Tastes very good with hot tawa rotis. And if you love porota or luchis, this can go with it. It is very simple and less time taking.

For cooking this dish you need some vegetables, which can be available in your fridge. Some vegetables which are lying there unused for some days will also go with it. It will not be wrong to call it “A Medley of Vegetables”.

Let me now introduce the vegetables and spices for this medley:

Vegetables:

Brinjal, Carrot, Pointed gourd, Ridge gourd, Green plantain, Tomato and Green chillies.

Spices:

Haldi powder

Red Chilli powder

 Panch phoron 

Salt

Sugar (optional)

Cooking oil

Preparation:

Vegetables as per the quantity you need.. You can add more vegetables to this.

First cut the vegetables into small pieces.

Next pressure cook for a couple of whistles.

Next:

Take very little oil in a kadhai.

Once hot, add some panch phoron and also add the green chillies. Crackling starts, the aroma of the panch phoron starts spreading, then add the boiled vegetables.

Next add haldi powder and red chilli powder. Salt to taste comes next. Add little sugar if you like.

Let it boil for 3 to 4 minutes.

Judge the consistency you want. Keep the jhol/gravy thin for this is more on the side of a soup.

Once done serve and relish the way you want.
